LEFTOVER EASY FRIED RICE

1/3 Cup Gili Ginger Elixir (about 8cl)

1 Cup White Rice

2 Cups Water

4 Eggs

Vegetables (any leftovers)

HOW TO
A perfect Zero Waste Recipe, you can use any other vegetable you have in your fridge and cut into cubes.
Bring the water to a boil, then add the rice and reduce heat to a light simmer for 8 minutes. The rice should still be “Al Dente”. Drain the excess water and let the rice cool down preferably over night but this is optional.
In a wok drizzled with sesame oil, cook the vegetables of your choice at high temperature. In the meantime, beat the eggs until smooth, and pour a thin layer of eggs in a flat pan (use only half of the beaten eggs). Flip gently after 2 minutes. Repeat with the rest of the beaten eggs for a second omelette.
Add the rice with the veggies, on high heat. Fry until warm, add the Gili and mix well.
TIP BY CHEF ENZO:
For meatlovers, panfry a chicken breast and cut in small bites before adding it to the vegetables.
